News - World’s best Pastry Chef 2019 is announced

World’s 50 best loves to tease, they always give us little amuse before they serve the main course. Just yesterday this year‘s best pastry chef was announced, and the tile went to the current Head Pastry Chef at Alain Ducasse Plaza Athénée. When joining the team, after the departure of such a star as Michalak was, Jessica Prealpato had a lot to prove. It was the innovative approach and the dessertalite philosophy (the word comes from combining dessert with naturalite - nature) that brought her respect of the culinary worlds’ masters. She reduced dramatically the amounts of sugar and heavy cream used in her kitchens, yet at the same time she boosted the traditional flavors, brought regional french recipes no one would ever dream of serving in kitchen decorated with three Michelin starts, and she focused on the most flavoursome local french produce.
