Restaurant Experience - Bo.lan, Bangkok

One of the things we admire most in chefs is when they don’t compromise in looking for the best and most authentic ingredients. The most difficult but one of the most rewarding thing one can ever do for own culture when being a chef is to dig down to the roots of own cuisine. Both aspects of cooking have been drilling the minds of Bo, and her now world renown small diner in Bangkok is the staple of what Thai cooking once was and what it represents. As seen in Netflix’s ‘Chefs Table’, she sacrifised a lot to understand how the food was understood, grown and prepared before the industrialisation, and only with this knowledge she has created dishes that leave the most unforgettable impression. From 2018 Bo.lan has also achieved zero carbon emission, and this is where we would want to see all restaurants going in future.
